An elegant new fine-dining experience – The Lighthouse Restaurant – has opened in Hale Village
Sleepy Hale Village, set on the river Mersey, is home to history dating back to Henry VII. The village streets lined with thatched cottages and the eight foot bronze statue of the Childe of Hale are just some of the treasures Hale Village has to offer.
It is in this setting that the sophisticated new venue The Lighthouse Restaurant has opened its doors. It is named aptly after the lighthouse that still stands on the estuary just a 10 minute walk away, a feature of the village since 1901. This new addition to Hale Village’s charm is only 10 minutes away from John Lennon Airport yet surrounded by rural countryside – perfect for a summer walk and tasty dinner.
This new endeavour is the dream of Jane and Philip Harris, directors of Waterfront Magazines and chef patron David Mao. The restaurant, formally a tea shop, has been elegantly transformed with unapologetic opulence; grey walls, crystal lighting, gilt mirrors and crisp white table linens.
The flatteringly-lit restaurant embraces guests with its ‘secret dining’ ambience. We asked Jane and Phil how this dream became a reality: “It’s always been something we wanted to do but the venue is only half of this recipe, you need the perfect chef and we feel Dave Mao has just made this possible.”
Dave’s proven track record is impressive with time spent at Spire Restaurant as well as The London Carriage Works, in a career spanning many years. His skills and passion will undoubtedly place The Lighthouse Restaurant on the map and ensure its status as a local favourite.
Dave tells us: “The Lighthouse Restaurant sources local produce, even down to foraging in the village park for leaves that I work with to form leaf wafers to accompany ice cream desserts – a Lighthouse speciality.”
This level of passion gives The Lighthouse Restaurant a sense of belonging and promotes food with a difference. Other favourites on the menu include vegetarian crispy leek and courgette risotto cakes with pea puree, sautéed garlic enoki, smoked pepper and basil chlorophyll, grilled sea bass with parisienne vegetables, locally sourced potato and champagne fish sauce, and sous vide of free range chicken breast with parmesan tulle and Wirral watercress. Or savour the roasted rump of Herdwick lamb; crispy, slow cooked shoulder and rich marrow jus.
The trio behind the Lighthouse are all extremely passionate and want to offer a venue with a unique dining experience. With chef patron David Mao at the helm they look forward to offering new and exciting cuisine that will tempt food lovers and connoisseurs to visit the restaurant. You will not be disappointed.
